參雞湯

韓國的熱浪通常始於初伏,終於末伏,初伏至末伏這段時間便是一年之中最熱的三伏天。2006年的初伏是7月20日,中伏為7月30日,末伏則在8月9日。這三天被稱為「伏日」,韓國人多吃營養品進補。其中最具代表性的便是參雞湯。  參雞湯營養豐富、熱量高,有助於恢復炎熱下消耗的體力。參雞湯是在掏空內臟的整雞內放入糯米和紅棗、蒜、姜、甘草等韓藥材,放在石鍋里長時間熬煮後加蔥花作裝飾的食物。食用時,根據個人口味放入適量食鹽調味即可。清淡、鮮美的湯汁與嫩滑的雞肉、粘稠的糯米便是其美味所在。韓國人相信「以熱治熱」,也即是越熱的天越要吃滾燙的食物,才能達到降暑的目的。參雞湯正是「以熱治熱」的典範。韓國全境有不少參雞湯餐廳,各地風味略有不同。
